Grains and Malts
June was harvest time at my family farm in Italy, and my earliest memories hold the smell of grains and malts. Memories of hot summer days, everyone busy with the work of harvest time, me slipping into the barn and discovering sacks piled high surrounding a mountain of grain. Truly awe-inspiring, especially for a small boy. Naturally, climbing the bags and diving into the grain was the only possible thing to do. I still marvel at youth’s innocence, which allows for such adventures with no thought. The smell and textures were heaven, pure joy. Despite my best efforts to dust off, I was always found out by my grandmother, with a trail of grains leaking from every seam of my clothes, it’s no wonder. These memories are the seeds of my craft, my passion and are the inspiration for Fermento Beer.
Yeast
Microbiology was my chosen path of study. I did my research studies in the well-known Microbiology department at the University of Agriculture in Perugia, Italy. The knowledge and skill I learned about yeasts were invaluable. I decided to do post-graduate studies in Dundee, Scotland. On Fridays, we had a tradition of continuing our talks of yeast and fermentation with Professor Graeme as we made our way to the local pub. The discussions would subside once we had a pint in hand, savoring that first sip. These experiences and education breathed life into my craft, my passion and are the inspiration for Fermento Beer.
Hops & Water
Working for a biotech company in Switzerland, learning about this land of glaciers that provides the purest water was a lucky step in my beer-making journey. Abel, whose wife wouldn’t allow him to set up a homebrew kit in their house, brought his equipment to my kitchen. Fascinated by the world of hops, often assisted by my sweet daughter Sara, we brewed everything we could imagine. We were learning and discovering the effect of hops on the balance of freshness and intensity. I am Italian, and Abel is Spanish. We always returned from visiting our families with the best handmade cheeses and hams our countries offer. We shared our delicious treats and brewed our beer to pair perfectly with these fine foods. This began the reality of my craft, my passion and are the inspiration for Fermento Beer.
Balance
My philosophy has always been to live life fully, with passion and intelligence guiding me. A balanced life between work and strong connections to family and friends is the quality measure. I believe that quality far outweighs quantity, especially in the food and drink I choose. Therefore, Fermento Beer has the highest quality and standard of balance from my life experience and passion.
